After having gestational diabetes with Ivy, I have gained an awareness about my carb intake. I was diagnosed as “pre-diabetic”, which didn’t surprise me because I have struggled with my blood sugar levels and my mom is a Type-1 diabetic. The hardest part is knowing that my future will eventually consist of lots of dieting and insulin shots. So I’ve begun to prepare myself for what is to come.
One thing I have learned, literally EVERYTHING has carbs in it.
My mom and I have been working through our “diets” together trying to figure out what we can eat that isn’t loaded with carbs. One thing we have discovered this week is called a keto cupcake! Keto, meaning like the diet with high fat and low carbs. These cupcakes only have about 2-4 carbs in each cupcake.
I’ll be honest because things with no carbs aren’t always the tastiest… Except for a Diet Coke or Diet Dr. Pepper. (; But, I’m not kidding you. I tried my first bite and I turned to my mom and seriously said, “Is this real life?” It has been so long since I have had a treat and to taste something with no carbs that actually tastes like a treat… I mean come on!! Pure bliss.
Just saying, this is real life. For all you diabetics out there, HERE IS YOUR TREAT!!! And for all you dieters out there, here you go as well!
